As a man living in Cambodia, I feel I should comment on the authenticity of the ingredients...
- Fermenting - yes!- Fish Sauce - good - although they would probably just put in raw fish and ferment that with the sauce...- Jalapeños and Harbenaros are not Khmer at all. They use Bird's eye chilli which are far hotter and are native to the region.- They wouldn't usually normal Cilantro, they would use 'Chee bonla' which is known as Asian Coriander.
