This seems like the perfect way to grill brats. I've tried two different variations of the above method:
1) I just grill, no prep. This is usually what I do, but they're easily chewy and slightly tough. Not enough to complain though.
2) Simmer in a pan of beer for hours. The taste is phenomenal, but they're usually a tad soggy and kind of fall apart. And they don't get that awesome charring you can only get on a grill.
The method in the video seems like the right way to do it, and I'm amazed I haven't considered it!
The method in the video is basically a combination of your two variations.
