    UPDATE: Writing this nine days after posting so not sure anyone will see it but just in case...I tried this method and it worked perfectly. Probably one of the best steaks I have ever had. The key is using a thick steak and probes to ensure temperature is perfect. Other than that, it was about as easy as it gets.
